The EASIEST Healthy Lasagna Recipe
When a recipe is this good; you’ll be making it a staple in your meal planning. All the comfort of a traditional lasagna with creamy cheese and rich ragu but lightened up, loaded with healthy ingredients and simple to make.
Anyone just crave the comfort of pasta for dinner? Who doesn’t?! It is one of the most comforting and satisfying meals I know.
Comfort food but make it as healthy and nourishing as possible; that’s what I am all about. And if you’re here then you’re probably looking for some of the same.
One of the ways I have lightened this recipe up, whilst increasing its nutrients is by swapping every other layer of pasta for butternut squash. Butternut squash is so beautifully versatile, it holds up to the richness from the ragu and cheese layers whilst offering an increase in fibre and vitamin C. The key is to slice the layers nice a thin to make sure they cook and soften whilst baking in the oven.
Lasagna is cult in it’s recipe, with many having their own secret ingredients and techniques to make it extra special. I have taken a little bit of my Mums icon ragu recipe and incorporated it into my healthy lasagna recipe for that added comfort and taste of home. I suggest using a pre-made Soffritto mix for ease but by all means get creative, add chopped mushrooms, pancetta or try making with lentils for a vegetarian option.
Can we also discuss one pot meals please? As a busy mum, I LOVE a meal that I only have to make once and can repurpose over a few nights or even better, freeze and pull out when I am too tired to cook from scratch again. This is that meal. Freezes perfectly, and why is it anything with a ragu tastes so much better the next day?
