Recipe: Tofu Scramble
A wonderful childhood memory I have is my Dad making my bother and me dippy eggs and soldiers. He would cook them just right and gently tap around the edge of the egg to lift off the top, revealing perfectly running yolks. Team that with wholemeal toast and liberal splattering of Marmite and it was heavenly. Even now eggs and soldiers are a really comfort meal to me; which is why when I had to cut out eggs after a bought of perineal dermatitis, you can imagine my heartbreak.
In my search for replacing eggs I stumbled upon the wonder of tofu scramble. No, they are not dippy eggs but bare with me. The key to making this meal a success is all about packing in that flavour and helping the texture along. The great thing about Tofu is that it is a complete plant protein, which makes it a nutritional powerhouse, much like eggs! Tofu can, by nature be a bit tasteless but with the help of herbs and spices, you can transform it into a super special meal!
Ingredients:
150g Extra Firm Tofu*
1/2 tsp Turmeric
1 Tbsp nutritional yeast
Salt and Pepper
20g Sun-dried tomatoes
*The key with Tofu is to remove as much of the water as possible. Place the Tofu between a tea towel or some kitchen roll and pop a book onto it to apply pressure. Ideally do this the night before so it's ready for the morning. If time is of the essence just try to drain as much of the water from it as possible.
Recipe:
- Heat a little oil in a pan on a medium heat.
- Crumble the tofu, much like you would feta cheese.
- Add to the pan and keep moving the tofu around so that it starts to heat through.
- In a small cup, add the turmeric, salt and pepper and a little water to make a loose paste.
- Add the paste to the tofu mix and coat well, add in the chopped tomatoes at this point too.
- Once the mix is coated and the tofu has absorbed the turmeric mix, sprinkle the nutritional yeast and coat well once again.
You can serve this with toast, avocado or a hearty helping of veggies like I have.
The turmeric and nutritional yeast help to give a ‘egg’ like taste as well as the NY boosting B vitamins, which if following a plant based diet, can sometimes be lacking.
